This oh-so-yummy Carrot & Orange Loaf is perfect for the whole family. Soft, moist and indulgent, once baked it’s sure to disappear fast!

Made with carrots and naturally sweet dates, there’s no need for any added sugar, making it a healthier choice. The simple, wholesome ingredients also make this loaf a source of fibre and it’s gluten free! You’ll love how quick and easy it is to make.

Add some chopped walnuts or pecans for extra crunch if desired!

Just add: Carrots, milk, oil & eggs

Bake time: 45 minutes
Makes: 10 serves


WHAT YOU’LL NEED:

2-3 medium carrots (160g), grated
½ cup (125ml) milk 
1/3 cup (80ml) vegetable oil 
3 large eggs
Zest of 1 orange (optional)


DIRECTIONS:

  1. Pre-heat oven to 185°C (Bake). Grease a 20cm (8-inch) loaf tin and line with baking paper. 

  2. In a large bowl, whisk together the milk, oil and eggs. Stir in the grated carrots and orange zest (if using). Add the Carrot & Orange Loaf Mix and stir until well combined.

  3. Pour mixture into the prepared tin. Bake for 45–50 minutes, or until a skewer inserted comes out clean. 

  4. Allow the loaf to cool in the tin for 10 minutes, then transfer to a wire rack. Slice once fully cooled. Store in an airtight container.
