INGREDIENTS:
Seeds (76%) (linseed, sunflower seeds, sesame seeds, pumpkin seeds), almonds (15%), psyllium husk, salt.
WHAT YOU’LL NEED:
1½ Tbsp vegetable oil
¾ cup (187ml) boiling water
Sprinkle of sea salt or chilli flakes (optional)
Preparation time: 15 minutes
Baking time in oven: 50 minutes
Makes: 9 serves
METHOD:
Preheat the oven to 150°C (Bake)
In a large bowl, mix together the Seed & Nut Cracker Mix, oil and water. The mixture will be wet at first but will thicken up quickly. Divide dough ball into two equal portions.
Place one portion onto a sheet of baking paper, add another sheet of baking paper on top and use a rolling pin to spread the mixture as thinly and evenly as possible. Aim for one seed thickness! Repeat with the second portion.
Transfer onto two baking trays. Remove the top layers of baking paper. Sprinkle with salt or chilli if using.
Bake in the lower half of the oven for 45-55 mins or until golden brown. Switch the trays mid-way through cooking.
Turn off the oven and allow crackers to cool and dry out for 15 mins before transferring to a wire cooling rack. Once cool, break into pieces and store in an airtight container.
