ALLERGEN STATEMENT:

INGREDIENTS:

Seeds (76%) (linseed, sunflower seeds, sesame seeds, pumpkin seeds), almonds (15%), psyllium husk, salt.


WHAT YOU’LL NEED:

  • 1½ Tbsp vegetable oil

  • ¾ cup (187ml) boiling water

  • Sprinkle of sea salt or chilli flakes (optional)

Preparation time: 15 minutes
Baking time in oven: 50 minutes
Makes: 9 serves

METHOD:

Preheat the oven to 150°C (Bake)

  • In a large bowl, mix together the Seed & Nut Cracker Mix, oil and water. The mixture will be wet at first but will thicken up quickly. Divide dough ball into two equal portions.

  • Place one portion onto a sheet of baking paper, add another sheet of baking paper on top and use a rolling pin to spread the mixture as thinly and evenly as possible. Aim for one seed thickness! Repeat with the second portion.

  • Transfer onto two baking trays. Remove the top layers of baking paper. Sprinkle with salt or chilli if using.

  • Bake in the lower half of the oven for 45-55 mins or until golden brown. Switch the trays mid-way through cooking.

  • Turn off the oven and allow crackers to cool and dry out for 15 mins before transferring to a wire cooling rack. Once cool, break into pieces and store in an airtight container.
