Mozzarella, Prosciutto & Sultana Salad

INGREDIENTS
Baguette, thinly sliced
1 pot buffalo mozzarella, sliced 
1 pack prosciutto (70-80g)
½ cup FreshLife Australian Sultanas
Rocket leaves
1 small red onion, thinly sliced 
2 tbsp red wine vinegar
Salt 

Dressing 
1 tsp whole grain mustard
1 tsp runny honey
Juice of 1 lemon
Salt & pepper
3 tbsp extra virgin olive oil 


METHOD

  • Make the homemade croutons:

    • Brush extra virgin olive oil on both sides of thinly sliced baguette pieces. 

    • Lay on a baking paper-lined tray and bake in a 200°C oven for 8 minutes, or until crispy. 

    • Leave to cool.

  • Sprinkle salt over thinly sliced red onion, then place in red wine vinegar. Leave to marinade for 10 minutes until the onion is soft. 

  • In a small bowl, mix all the dressing ingredients. Taste and season with salt & black pepper if needed.

  • Assemble the salad:

    • Arrange rocket, mozzarella, prosciutto, onion and sultana on a salad platter. 

    • Cut the slices of toasted baguette into quarters to make croutons.

    • Serve with dressing and garnish with herbs.
