Maple Nut and Seed Clusters

Makes: 1 large tray
INGREDIENTS
1 cup FreshLife Californian Walnut Pieces
½ cup FreshLife Pumpkin Seeds
½ cup FreshLife 4 Seed Mix
1 large egg white
2 tbsp pure maple syrup
1 tsp vanilla bean paste
½ tsp ground cinnamon
1 pinch sea salt
METHOD
Preheat oven to 160°C and line a large baking sheet with baking paper.
Add the egg white to a large mixing bowl. Whisk vigorously for about 1 minute until it is completely frothy and bubbles form.
Pour the maple syrup, vanilla bean paste, ground cinnamon, and sea salt into the frothy egg white. Whisk gently to combine.
Tip the FreshLife Californian Walnut Pieces, Pumpkin Seeds, and 4 Seed Mix into the bowl. Toss the mixture thoroughly until every nut and seed is completely coated in the liquid.
Transfer the mix onto your lined baking sheet. Use the back of a spoon or a spatula to press the mixture down firmly into a flat, single, even layer. Note: Keeping the mix tightly packed is the secret to getting giant clusters.
Bake for 20 minutes until the edges turn a deep golden brown and the kitchen smells fragrant.
Remove from the oven. Leave it to cool completely on the tray for at least 30 minutes. The clusters will crisp up as they cool.
Once cold, gently break the sheet into chunky, rustic clusters. Pack them carefully into small, airtight jars.
