Fluffy Almond Flour Pancakes

INGREDIENTS

2 cups FreshLife Almond Flour
1 tbsp FreshLife Ground LSA & Chia
2 tsp baking powder (gluten free)
1 tsp cinnamon
a pinch nutmeg
3 size 7 eggs
¾ cup unsweetened almond milk (or other milk)
1 tbsp maple syrup or honey
1 tsp vanilla extract

Oil for cooking

Optional Toppings:
Fresh mixed berries
Maple syrup or honey 


METHOD

  • Combine all the wet ingredients. Add the dry ingredients and mix well. 

  • Heat a little oil in a large skillet (or frying pan) over a medium-low heat.

  • Spoon about 3 tablespoons of batter into the skillet. Spread mixture to form a circle 10cm across. If your skillet is large enough, cook two pancakes at once.

  • Cook for 2-3 minutes. When the top is almost set and bottom is lightly browned, flip and cook for another 2-3 minutes.

  • Transfer to a plate, keep warm and repeat the process with the remaining batter.

  • Serve with fresh berries and a drizzle of maple syrup or honey.
