Air fryer Spicy Vegetable Pakoras

INGREDIENTS

2 red onions, thinly sliced
½ tsp salt
1 cup grated pumpkin
1 cup grated or finely chopped cauliflower
½ - 1 green chilli, chopped (adjust to taste)
1 tsp ginger, finely chopped 
½ tsp garlic, finely chopped
Handful fresh coriander or mint, roughly chopped
1 cup FreshLife Chickpea Flour
2 tbsp FreshLife Rice Flour
½ tsp chilli powder
½ tsp ground turmeric
1 tsp vegetable oil
Cooking spray oil 

Serve with:
Mango chutney, green chutney, yoghurt dip, tomato sauce 


METHOD

  • Sprinkle salt over sliced onions. Leave for 10 minutes until the onions soften.

  • In a large bowl, place softened onions (including the moisture that came out of onions) and all the other ingredients except the oil. Mix with hands well until a clumpy dough forms.

  • Add 1 tsp oil, mix thoroughly, and form 10 patties. Lightly spray some oil over the tops of the patties.  

  • Lightly spray some oil inside the air fryer basket. Place the patties in the basket, making sure they don’t touch each other. 

  • Cook for 8 minutes at 180°C, then turn and cook for another 4-5 minutes, or until crispy.

  • Serve hot with your favourite dipping sauce.
