Florentines

Makes: 20 Biscuits
INGREDIENTS
50g salted butter
50g light brown sugar
50g golden syrup
50g flour
50g glacé cherries, chopped
75g FreshLife Natural Almonds, chopped
50g FreshLife Pistachio Kernels, chopped
2 oranges, zested
175g dark chocolate
METHOD
Heat the oven to 180C (Bake) and line two baking sheets with baking paper.
Combine the butter, sugar and golden syrup in a small saucepan and melt over a low heat, stirring frequently. Remove from the heat and whisk in the flour, then add the cherries, chopped almonds, pistachios and orange zest.
Use a tablespoon measure to scoop about 10 mounds of the biscuit mixture onto the baking sheets, leaving plenty of room for them to spread. There won’t be room to fit all the mixture on two trays, so you’ll need to cook in batches.
Bake for 10 minutes until golden. The florentines will be soft at first, so leave to cool for 2 minutes until firm enough to lift onto a wire rack to cool completely. Repeat with the remaining mixture.
Coat the florentines: Melt the chocolate in a microwave-proof bowl in 30 second bursts. Spoon a little melted chocolate onto the base of each florentine and spread to the edges. Allow to cool and start setting, then use a fork to draw wavy lines across the chocolate.
Leave to set completely before storing or packing as a thoughtful Christmas gift.
