Crunchy Granola Parfait

Cook time: 30 minutes
Makes: 2 large jars


INGREDIENTS

350g rolled oats 
100g FreshLife 4 Seed Mix
1 tsp sea salt 
½ tsp cinnamon
½ tsp ginger
125ml coconut oil, melted
125ml liquid honey
1 tsp vanilla extract 
100g FreshLife Australian Sultanas

To serve:
Greek yoghurt
Fresh fruit
Fruit puree 


METHOD

  • Preheat the oven to 150°C. Line a large baking tray with baking paper.

  • Mix the oats, seeds, salt, cinnamon and ginger together in a large bowl.

  • Melt the coconut oil and stir in the honey and vanilla essence. Pour over the oat mixture and stir well until evenly coated.

  • Spread the mixture onto the lined baking tray in an even layer.

  • Bake for 25-30 minutes until golden, stirring thoroughly after the first 10 minutes.

  • Remove the granola from the oven and set aside to cool. It will continue to crisp up as it cools.

  • Once cooled completely, add the sultanas and mix them through, breaking the granola up as you do so. 

  • Store in airtight jars. Use within two weeks. 

  • Serve with yoghurt, fresh fruit or fruit puree. Try layering the granola with fruit and Greek yoghurt in a glass or jar for something a bit different.
