Crunchy Granola Parfait

Makes: 2 large jars
INGREDIENTS
350g rolled oats
100g FreshLife 4 Seed Mix
1 tsp sea salt
½ tsp cinnamon
½ tsp ginger
125ml coconut oil, melted
125ml liquid honey
1 tsp vanilla extract
100g FreshLife Australian Sultanas
To serve:
Greek yoghurt
Fresh fruit
Fruit puree
METHOD
Preheat the oven to 150°C. Line a large baking tray with baking paper.
Mix the oats, seeds, salt, cinnamon and ginger together in a large bowl.
Melt the coconut oil and stir in the honey and vanilla essence. Pour over the oat mixture and stir well until evenly coated.
Spread the mixture onto the lined baking tray in an even layer.
Bake for 25-30 minutes until golden, stirring thoroughly after the first 10 minutes.
Remove the granola from the oven and set aside to cool. It will continue to crisp up as it cools.
Once cooled completely, add the sultanas and mix them through, breaking the granola up as you do so.
Store in airtight jars. Use within two weeks.
Serve with yoghurt, fresh fruit or fruit puree. Try layering the granola with fruit and Greek yoghurt in a glass or jar for something a bit different.
