Crispy Flatbreads - Two Ways

Serves: 8-10 as appetiser


INGREDIENTS

1. Flatbread with brie, sultanas, walnuts & hot honey drizzle
2 store-bought flatbreads (or naan)
1 brie cheese (100–125g), sliced
⅓ cup FreshLife Australian Sultanas
⅓ cup FreshLife Californian Walnut Pieces, chopped
1 tbsp olive oil
4–5 sprigs fresh thyme leaves 

For the hot honey drizzle
¼ cup runny honey
¼ – ½ tsp chilli flakes (adjust to heat preference)  

2. Chicken and sultana Flatbread
2 store-bought flatbreads (or naan)
4 tbsp hummus
1 tbsp parsley, chopped
½ cup grated Mozzarella 
100g smoked chicken breast, sliced
¼ cup FreshLife Australian Sultanas
Smoked paprika
Drizzle of olive oil 


METHOD

  • Preheat the oven to 200°C. Line two oven trays with baking paper.

  • 1. Brie, sultanas, walnuts flatbread : Place two flat breads on a tray.  Arrange brie slices, sultanas and walnuts on the bread. Drizzle olive oil and scatter thyme. 

  • 2. Chicken and sultana flatbread : Spread hummus on the remaining two flatbreads on the second tray. Sprinkle parsley and Mozzarella. Arrange chicken and sultanas. Drizzle olive oil and sprinkle paprika .
    Bake in the oven for 8 minutes or until the cheese melts and the topping is starting to brown.

  • For the hot honey drizzle : Meanwhile, in a small heatproof jug or bowl, mix honey and chilli flakes. Cover it with a small heatproof plate, and microwave for 30 seconds until the honey is heated.

  • Slice and arrange the baked flatbreads on a platter. Drizzle the hot honey over Brie and sultana flatbread. Serve garnished with some extra herbs.  Enjoy!
