Coconut Mango Sago Pudding

INGREDIENTS
400ml Coconut Cream
350ml water
½ cup of small sago pearls
3 tbsp brown sugar
1 mango, peeled and diced
3 tbsp FreshLife Shredded Coconut, lightly toasted
6 mint leaves
METHOD
Combine the coconut cream, water and sago in a medium saucepan and soak for 20 minutes.
Place the pan over a medium heat, bring the mixture to the boil, then reduce the heat slightly and cook for 5-10 minutes, stirring constantly to prevent it from sticking. The sago balls will turn clear with a little white spot in the middle when they are cooked.
Remove the sago from the heat, add 2 tablespoons of brown sugar and check for sweetness. Add the remaining sugar if required.
Spoon the mixture into four individual bowls or glasses and place in the fridge for at least 2 hours to chill.
Just before serving, top each portion with some pieces of mango, a sprinkle of toasted shredded coconut, and some fresh mint leaves.
