Coconut Mango Sago Pudding

INGREDIENTS

400ml Coconut Cream
350ml water
½ cup of small sago pearls
3 tbsp brown sugar
1 mango, peeled and diced
3 tbsp FreshLife Shredded Coconut, lightly toasted
6 mint leaves


METHOD

  • Combine the coconut cream, water and sago in a medium saucepan and soak for 20 minutes.

  • Place the pan over a medium heat, bring the mixture to the boil, then reduce the heat slightly and cook for 5-10 minutes, stirring constantly to prevent it from sticking. The sago balls will turn clear with a little white spot in the middle when they are cooked.

  • Remove the sago from the heat, add 2 tablespoons of brown sugar and check for sweetness. Add the remaining sugar if required.

  • Spoon the mixture into four individual bowls or glasses and place in the fridge for at least 2 hours to chill.

  • Just before serving, top each portion with some pieces of mango, a sprinkle of toasted shredded coconut, and some fresh mint leaves.
