Chocolate Walnut Brownie (Gluten Free)

Makes: 9 slices


INGREDIENTS

150g dark chocolate (gluten free)

90g unsalted butter

Pinch of salt

140g brown sugar

1 tsp vanilla essence

2x size 7 eggs

70g FreshLife Gluten Free Almond Flour

60g FreshLife Gluten Free Rice Flour

75g FreshLife Walnuts (reserve some for topping)


METHOD

  • Preheat the oven to 190°C. Grease and line a 20cm square baking tin with baking paper.

  • Melt the butter and chocolate together in the microwave, stirring at intervals until smooth. Let cool for 5 minutes.

  • Add the sugar, eggs, and vanilla, mixing until smooth and well combined.

  • Fold in the rice flour, almond flour and two-thirds of the walnuts until just combined.

  • Pour the batter into the prepared tin and smooth the top.

  • Sprinkle the remaining walnuts over the top.

  • Bake at 180°C for 25 minutes.

  • Let cool in the tin for 20–25 minutes, then transfer to a wire rack to cool completely.

  • Once cooled, cut into 9 slices and enjoy!
