Apple, Sultana & Walnut Salad

INGREDIENTS
2 green apples (such as granny smith), thinly sliced
1 lemon, zest and juice
1–2 celery sticks, thinly sliced
½ cup FreshLife Californian Walnuts, roughly chopped
½ cup FreshLife Australian Sultanas

Dressing 
3 tbsp cup mayonnaise
3 tbsp natural unsweetened yoghurt
1 tsp Dijon mustard
2 tbsp lemon juice
Salt and black pepper


METHOD

  • Zest and juice the lemon, reserving 2 tbsp juice for the dressing, then sprinkle the rest of the juice over the sliced apple.

  • Mix all the dressing ingredients in a small bowl.

  • In a large bowl, combine all the salad ingredients. Pour the dressing and toss well.
