LSA & Chia Muffins

Serves:  10-12 muffins


INGREDIENTS

1 cup FreshLife LSA + Chia 

1 cup FreshLife Ground Almonds

1 tbsp baking powder 

1 tsp ground cinnamon 

¼ tsp salt 

113g butter, softened 

4 large eggs, lightly beaten

½ cup sugar

½ cup water

2 tbsp sliced almonds (optional)

METHOD

  • Pre-heat oven to 175°C.

  • Line a 12-cup muffin pan with paper muffin liners.

  • Combine the LSA+Chia, ground almonds, baking powder, cinnamon and salt in a large mixing bowl.

  • Add the softened butter, eggs, sugar and water to the dry ingredients and beat together until the ingredients are just blended.

  • Spoon the mixture into the prepared muffin pan. Add a sprinkle of sliced almonds to each muffin, if using. 

  • Bake in the oven for 20-25 minutes or until a toothpick inserted into the centre of a muffin comes out clean. Allow to completely cool before serving.
