Chocolate Mug Cake

 

Gluten Free


Serves:  2-3 mugs or ramekins


INGREDIENTS

4 tbsp FreshLife Ground Almonds

1 tbsp cocoa powder

¼ tsp baking soda

1 egg

3 tbsp almond milk

2-3 tbsp maple syrup

1 tsp vanilla

Extras: Peanut butter, Chocolate spread, Chocolate chips

METHOD

  • Mix all dry ingredients in a bowl and add wet ingredients. Mix until well combined.

  • Evenly pour mixture into either ramekins or mugs, these will rise in the microwave so fill to a three quarters full level.  There should be sufficient to make around 2-3 mugs or ramekins dependent on their size.

  • Once you’ve filled your mug or ramekin, place a teaspoon of peanut butter or chocolate spread inside the mixture, or add a few chocolate chips

  • Cook in microwave for 1 minute, then cook in 10-20 second increments dependent on your microwave’s wattage until your cakes are cooked.

  • Serve with a dollop of ice cream or cream
