Anzac Biscuits with Coconut & Chia

 

Makes 12 biscuits


 

INGREDIENTS

1 cup FreshLife Ground Almonds

1 cup rolled oats

½ cup FreshLife Coconut Chips, larger pieces chopped in half

½ cup brown sugar

1 tbsp FreshLife Chia Seeds

125g unsalted butter

4 tbsp golden syrup

1 tsp baking soda

METHOD

  • Preheat oven to 180°C/160°C fan forced.

  • Line 2 baking trays with baking paper.

  • Mix ground almonds, oats, coconut, sugar and chia in a large bowl. 

  • Place butter and golden syrup in a saucepan over medium high heat and stir until butter has melted.

  • Add baking soda and stir to combine - it will fizz up, this is normal. Immediately remove from heat.

  • Pour butter mixture over the dry ingredients and mix until just combined.

  • Shape 1 tablespoon amounts of mixture into balls, flatten into patties. Place 2-3cm apart on prepared trays.

  • Bake for 15 minutes or until deep golden brown in colour. For a chewy biscuit, bake for 12 minutes.

  • Allow to cool on the trays for 5 minutes then transfer to a wire rack to cool and firm up.
