Pear & Almond Muffins


Makes: 12 Muffins



2 eggs

½ cup milk

½ cup extra light olive oil

¾ cup caster sugar

300g canned pears, mashed

1 cup wholemeal self raising flour

1 cup self raising flour

1 tsp cinnamon

½ cup FreshLife Slivered Almonds

Extra FreshLife Slivered Almonds and brown sugar for topping


  • Preheat oven to 180°C and grease 12-hole muffin pan.

  • In a large bowl, whisk together eggs, milk, oil and sugar. Stir in pear.

  • Add flours, cinnamon and FreshLife Slivered Almonds and mix until just combined.

  • Divide mixture between muffin pan and sprinkle tops with extra FreshLife Slivered Almonds and brown sugar.

  • Bake for 20 minutes or until a skewer inserted into the centre comes out clean. Remove from pan. Place on wire rack. Serve warm.
