Parmesan Oat & Seed Crackers


Makes: 20-30 pieces approx.


½ cup FreshLife Pumpkin Seeds 

½ cup FreshLife Sunflower Seeds

⅓ cup FreshLife Sesame Seeds

⅓ cup FreshLife Black Chia Seeds

⅓ cup linseed (flaxseed) 

1 cup rolled oats

¾ cup all purpose white flour

2 tsp salt 

1 cup parmesan cheese, grated

½ cup rice bran oil

1 cup cold water 


  • Preheat oven to 170°C. 

  • Mix all seeds, rolled oats, sifted flour, salt and parmesan cheese in a bowl, then add the oil and water and mix together well. 

  • Cut two sheets of baking paper, each the length of your baking tray.

  • Tip ⅓ of the mixture onto one of the sheets. Place the second sheet on top of the mixture and using a rolling pin, roll out as thinly as possible (to around 3 – 4mm thickness). Remove top layer of baking paper and trim the edges of the mixture to form a large rectangle.

  • Repeat with the remaining mixture as required.

  • Place on baking tray (with baking paper underneath) and bake for approximately 20 minutes or until crisp and golden. 

  • Remove from oven and slice into 5cm squares. Place on wire rack to cool. 

  • Serve as soon as they are cool or store in an airtight container.

TIPS: If some crackers are still a little soft, return them to the oven to crisp up.
