No Bake Seeded Muesli Bars

 

Making your own muesli bars is a great way to have healthy snacks for work and school lunches. These are super yummy with or without the chocolate topping.


Makes:  16 bars


INGREDIENTS

2½ cups rolled oats

½ cup FreshLife Sunflower Seeds

½ cup FreshLife Pumpkin Seeds

½ cup FreshLife Sesame Seeds

½ cup raisins or sultanas

½ cup peanut butter (or almond butter or tahini)

½ cup liquid honey

115g butter

salt flakes, optional

150g chocolate, optional

METHOD

  • Grease and line base and sides of a square cake pan, approx. 23cm x 23cm x 5cm deep.

  • Place oats into a food processor and pulse for 20 seconds, or until finely chopped. Pour into a large bowl. Add sunflower seeds, pumpkin seeds, sesame seeds and raisins and mix well.

  • Add peanut butter, butter and honey to a saucepan and heat over medium heat until melted. Pour over the seed mixture and stir until well combined.

  • Press mixture firmly and evenly into the cake pan using a metal spoon.

  • Melt chocolate in a double boiler or the microwave (microwave for 15 second intervals, stirring each time, until smooth).

  • Pour the melted chocolate over the muesli mixture and smooth out. Top with salt (if using) then place in the fridge to set.

  • Once set, slice into muesli bars. Store bars in a container in the fridge or freezer.
