Dukkah

 

This Dukkah is super easy to make and full of goodness. It is Gluten Free, Dairy Free and Vegan. 


Makes 1½ cups approx.


INGREDIENTS

1 cup FreshLife Pistachio Kernels 

½ cup FreshLife Natural Almonds

2 Tbsp FreshLife Sesame Seeds

2 Tbsp fennel seeds

1 tsp cumin seeds 

2 tsp ground coriander  

½ tsp salt

METHOD

  • Preheat oven to 170°C bake. 

  • Line a baking tray with baking paper and add spread the pistachios and almonds evenly across the surface.

  • Lightly toast for 10 minutes, then remove from the oven to cool.

  • In a small frying pan, toast the fennel and cumin seeds over a medium heat until they start to smell fragrant. Add the coriander and toast for a further 1-2 minutes. Transfer to a small bowl and allow to cool.

  • In the same frying pan, lightly toast the sesame seeds for 3-4 minutes. Set aside to cool.

  • Once completely cooled, place the nuts, spices, seeds and salt in a food processor and blend until you have a coarse crumb. 

  • Store in an airtight container.

TIP

Serve with breads and a good olive oil or sprinkle over roasted veggies.
